You can probably imagine the disappointment as we should’ve been with friends in Barcelona this weekend to see and celebrate the marriage of their son but Covid 19 put a stop to everything but a small, family wedding in the UK so, we decided to celebrate with “Tapas at home” - The secreto was fantastic, if you’ve never tried Iberico pork, you really, really need to, Described as the Wagyu of pork, it really is - it has a unique & indescribably nutty flavour & texture & benefits from cooking really quickly over hot coals & serving pink. It sounds wrong for pork but its perfectly safe & the texture is meltingly soft. It was the perfect way to try to celebrate & forget the disappointments. Served with padron peppers & griddled sourdough with La Chinata tapende it was as close to Spain as we could get!

This was a stunning pice of pork from Basco. Charcoal grilled on a high heat for a couple of minutes per side with nothing other than salt and pepper. Served with some Padron peppers, rocket, shaved Manchego cheese and quince sauce, it was gorgeous! The pork was beautifully marbled, arrived well packaged and was a bit over the 1Kg weight ordered. Well done Basco - I will definitely be ordering again.
