WHAT IS COCHINILLO? When it comes to roast whole suckling pig, there is no finer meat in the world than the traditional Spanish Cochinillo. The soft and tender meat literally melts in the mouth whilst the crispy crackling will delight the senses with every forkful of this incredible delicacy. Unlike many of the commercially reared animals that you will find elsewhere, our whole suckling pigs are always kept with their mothers up to a maximum of 21 days. This is the only farming method that stays true to the traditional practices from which the name suckling pig was derived. Keeping things natural also delivers meat with the finest flavour and texture. ORDERING YOUR WHOLE SUCKLING PIG You do not need to be a master chef to create a dish to die for when you use one of our prime piglets. Each one will arrive at your door ready to roast in the oven, allowing you to relax and look forward to the feast ahead. You will receive one frozen whole suckling pig, delivered on ice pads. If you are not using it straight away, store in the freezer. If you are, then you will need to thaw it in the fridge for at least 24 hours before cooking. HOW BIG IS THE WHOLE SUCKLING PIG? Each whole suckling pig weighs between 4 and 5 kilos and measures between 45-50cm in length, so don't worry, it will fit in any conventional oven. DEFROSTING YOUR SUCKLING PIG Place your whole suckling pig in the refrigerator to begin the thawing process. After a couple of hours, you will be able to remove the packaging and allow the suckling pig to defrost at a temperature between 2-4º C, for 12 to 24 hours. COOKING YOUR SUCKLING PIG So, why not take advantage of our excellent whole suckling pig price and buy one of our extra special whole suckling pig yourself. You can easily roast yours traditionally (Cochinillo asado) in an oven for friends and family, the results will remain the same fantastically flavoursome. Take your whole suckling pig out the refrigerator and pat dry the pig all over to remove any moisture created during the defrosting process. Allow the suckling pig to reach room temperature for 2 hours before cooking. Cook in a pre-heated oven 180°C/350°F/Gas Mark 4 for 3 hours. SERVING YOUR SUCKLING PIG Serve your roasted suckling pig with a glass of quality red wine, such as our Valduero Una Cepa from Ribera del Duero, some roast potatoes, seasonal vegetables and make some real gravy with some stock and scrapping the pan juices created during roasting. The pig arrived late, it was supposed to be delivered on the 20th but came on the 21st, I called numerous times but not once got through which was really disappointing and distressing as I needed the pig for an event. Another problem was once the pig did arrived there was no ice, no cooling system and the pig was warm and had a pungent smell which required us having to wash it multiple times to get rid of.

Hello Lawrence, Thank you for your feedback, and after speaking to my team, it's unfortunate that the parcel was delayed whilst in transport, which was out of our control, and I can only apologise for this on behalf of the business. With regards to the parcel not having any Ice protecting the Suckling Pig, I have highlighted this with our Senior Warehouse Management team to investigate for me, as we always ensure that all chilled/frozen products we dispatch have accompanying ice as a basic rule, so this is a first for us not to have ice included In over 15 years of trading. OMG! We had your suckling pig for lunch yesterday and everyone agreed that is was an incredible feast! Most of my guests had never tasted suckling pig before and were blown away with the flavour and the quality of the roast. The skin turned out crispy, the meat underneath was juicy and cooked to perfection using your recipe online. The 5kg piglet fed 6 people, with many having second helpings but still there were leftovers for me to enjoy today and tomorrow! Although not inexpensive, the price was worth every penny for the outstanding product that we enjoyed. I will definitely be back to buy again as it is a 'Wow!" and so easy to prepare. Thank you!
