Our milk-fed lamb leg is a traditional Spanish delicacy, known as Cordero Lechal. We source our milk-fed lamb from farms where the animals are raised with care, from birth to slaughter. This young lamb is typically around 35 days old and weighs between 9 to 12 kg. There are three main breeds of milk-fed lamb in Castilla y Leon: churra, castellana, and ojalada. Traditionally, milk-fed lamb is roasted in a wood-fired oven with salt, oil, and a touch of water. The result is a tender, soft-textured meat with a crispy golden skin and a creamy texture that melts in the mouth. Our milk-fed lamb leg is perfect for special occasions, such as Sunday lunch or Easter, and is also suitable for everyday meals.

Although these lamb legs look smaller than the British ones, they have a much sweeter and stronger flavour. A little meat goes a long way!
