Spanish goat's cheese croquetas are a world away from frozen potato affairs. These hand-made croquetas are made with a thick bechamel made from local milk, hand-rolled and coated in breadcrumbs, using local goat's cheese. They make a perfect tapas or pintxos, deep fry from frozen in medium hot oil until golden brown on the outside, or shallow fry in small batches until a lovely, crunchy golden colour for 3-5 minutes. Come frozen in trays of 12 croquetas of approx. 40g each. Cook from frozen.
