The pigs live in dehesa fields for two years, feeding on acorns for optimal nutritional properties. Afterward, the ham undergoes a minimum of 48 months' curing in natural drying sheds, enhancing its rich flavor. “I bought 2 of the same one, but they sent me 2 different hams. One was really good, the other was dry and chewy. Shame I only noticed when I opened them.”
