Montanegra Iberico Lardo de Bellota is a type of charcuterie product made in Extremadura by curing strips of back fat from Iberian black pigs with salt. The Iberian breed pigs are raised on a diet of grass and acorns, which provide the meat and fat with its distinctive sweet aroma and nutty flavor. This charcuterie product is not just lard, but a melt-in-your-mouth delicacy unlike any other. The fatback from Spanish Iberico de Bellota pork is ideal for making the best lardo. Once it is salted, the fatback is hung to dry for weeks, losing most of its water and transforming into a silky, spreadable block of flavor. Iberico Lardo can be used as a basting and flavoring agent in multiple cooking methods or simply eaten on its own. Sliced in super thin, translucent slices, this Iberico Lardo will melt on your tongue. Serve on warm toast.

I ordered 8kg of this lardo Every piece was coated in rather big chunks of salt Which I’m not sure was right Didn’t have a great taste just very salty We removed the rind and cooked it for an oil we were making and the amount of ammonia smell that came off it wasn’t nice at all

Bought this for cold smoking, it tastes amazing and melts on top of some toasted sourdough.

I have just created a Pizza that contains Iberico Bellota Lardo and Mangalitza Streaky Bacon. It's hard to source cured Lardo in Shropshire but Basco has stepped up to the mark and supplied me with a quality product that delivers. Well done Basco keep up the great work.

Re: New Order from Basco #RE100072646 Carl Ferreira Tue, Aug 23, 3:29 PM (5 days ago) to Basco Dear Sir's Just received the [Order #RE100072646] (19 August 2022) However, it is with regret that I have to inform you that the lardo -- (613 grms of it) was very, very rancid. Ferrarini Sliced Smoked Pancetta 500g although not as bad as the lardo was also starting to oxidate.. I am aware that the weather had been very hot and if proper care to have it cold stored is not taken, it will oxidate quite rapidly.. I absolutely love lardo from Iberico pork,( I grew up on it) therefore I am very disappointed.. Rgds C. Ferreira
