Typically aged for around 3 months (sometimes longer depending on batch), it’s a semi-cured cheese with a herbal twist rather than deep ageing intensity. The rosemary coating is the key feature here. It’s not just decorative. It actively flavours the rind and subtly infuses the paste. Flavour and texture Texture: Firm but slightly yielding, not dry Taste: Nutty sheep’s milk base with a clear herbal lift Finish: Fragrant, slightly savoury, with a gentle tang Aroma: Fresh, woody, distinctly rosemary-led The core flavour is very recognisable as sheep’s cheese, but the rosemary adds a Mediterranean feel. Think warm hillsides, dry herbs, and sunshine rather than cellar-aged depth.
