Finca Pascualete, a Spanish cheese producer with a history dating back to the 13th century, crafts this mini Retorta cheese from unpasturised sheep's milk. The cheese is made using only salt and thistle rennet, making it suitable for vegetarians. The sheep graze on the wild pastures of Extremadura, imparting a floral, herbacious flavour. This soft, unctuous and creamy cheese has an ivory colour and a powerful flavour and aroma. Best enjoyed by cutting off the top and spooning out the creamy paste onto some toasted sourdough.
