“Making sourdough focaccia, the main problem is that it sticks to the ceramic dish, and is almost impossible to retrieve intact. All the American websites recommended this particular cake pan, and it's all true! It's made of aluminium covered steel, with a silicone surface coating, and is amazingly glassy and smooth to the touch. The focaccia practically jumps out of the pan, at the mere sight of the plastic fish slice...absolutely no problem with separation. It seems plenty robust but you would need to be mindful about being careful with the surface finish I'm thinking.”
