I use this lovely fine flour for making my sourdough starter, as Bakery Bits recommend. I also use it for thickening gravy etc as it doesn't make lumps, and for dusting the dough when I handle any bread I'm making, as it doesn't go sticky. It has high gluten, and makes a lovely elastic dough for pizza or ciabatta.

Expensive but you get what you pay for. Top quality flour for Pizza, great taste and the dough is great to handle

Makes really good pizzas, definite step up from 'standard' strong white flour. Fantastically fine flour.
