“I was completely new to sourdough baking, was not keen on the stretch and fold thing so bought a Wilfa Pro Stand Mixer (one of the few that picks up everything from the bottom of the bowl). Most white flours just didn't work until I found Merchant's Mill - perfect results every time (as a complete novice) at 75% hydration with 100% flour, 20% starter and 2% salt. Autolease for 1 hour for flour and water and then 13 minutes on the Wilfa producing a perfect result. Am assured by neighbours that the result is as good as our local artisan bakery. Intend to try Merchant's mill mix next after reading a few wholemeal bread horror stories.”
