“I've been using Matthews Organic Plain Flour for quite a while now for all my baking. It's marvellous for pastry and biscuits, I can feel the quality of the flour when rolling out. For cakes, I just add bicarbonate of soda and cream of tartar to turn it into self-raising flour. The flour has an excellent smooth texture and, even though I sieve it just to add some air, there's never any lumps or clumping. Oddly, using BakeryBits is a lot cheaper than buying it from some of the mills directly. I used Matthews flour before and like it as it's organic, grown in the UK, and purchasing it supports our smaller businesses. I can't be happier, the flour is of great quality, it's easy to work with, pretty much does as it says on the tin. For my sourdough bread I use a mix of flours, normally 1/3 strong wholemeal, 1/3 strong white and 1/3 of spelt or eight grains. Definitely recommend. Keep up the good work everyone x”
