I customise packet mixes by adding little touches of fresh, dried or crystallised fruit, and 500g packet makes two of these cakes.
Cherry Madeira
Half, rinse and dry 100 - 150g Glace Cherries. Make up Madeira Cake mix. I put 1/4 cake mix into each "Duc" ; arrange and push half the Cherries down into the cake mix; Add the rest of the Cake Mix, and push the second layer of Cherries down below surface. I like to sprinkle the tops with grated Lemon Zest and some Golden Caster before baking as packet instructions”
