I have just started a low carb/ keto diet incorporating making homemade SIBO yogurt with a 36 hour fermentation time so this gets added to the yogurt to feed the probiotics and I add it to my morning coffee to help sweeten and add flavour and also help to feed the friendly guys in my gut.

Great for baking, extra useful fibre, you'll probably want to add some stevia if you're wanting some sweetness though as this is only midly sweet, which is great, but just so you know.

I mix this with stevia powder and use as my daily sweetener, I have IBS and cannot tolerate erythritol so this is a great option that is fibre rich and the perfect answer to my problem.
