The sauce does curdle sometimes due to the oil splitting, it hasn’t gone off so just stick a knife in and stir it and it goes back to normal. Likewise it can go solid in the fridge and again just stir and give it a shake but please don’t worry, it’s not off at all, it’s just natural pure ingredients with no additives so you just need to ensure you are shaking/mixing it, a bit like 100 percent nut butters that separates.
