OK. first let's be clear. this is a very useful set of ingredients that will make you a large number of bottles of very good looking wine. so you are in safe hands and you are getting a great product. Everything works and the product is beautiful. I got rows and rows of beautiful golden wine. I mean, it's picture perfect. I got everything bottles in clear bottles, shone a light across it and took pictures, and it looks wonderful. However, this is nitpicking and please forgive me, but i expected a bit more. I expected bit more acidity and i expected a bit more of a buttery note. Maybe there is a different way of doing it but i'm sure at some stage i tasted the buttery note, but after fining it's mostly gone. The result is a beautiful clear golden light apple and peach with a slight taste of honey and a mild hint of wood. Maybe a bit of melon, maybe a it of grass. I mean, no one will ever complain about that wine. But i worked hard and i was patient and i wanted something slightly a bit top of centre, instead of dead centre. I guess there is a lot of chardonnay in this blend, with a bit of viognier and chenin blanc. And maybe a blend of some spanish white varietals but i know those much less. I could be completely off base but i hope that helps.
