“The kit is easy to make and according to the hydrometer comes out around 12.5% I mistakenly left primary fermentation longer than the recommended 2 weeks but it doesn't seem to have spoiled the flavour from sitting too long on the sediment. We drink cheaper £5-6 per bottle australian supermarket wine at home and this tasted almost as good only 4 weeks from starting it off. Aging will improve it for sure but I don't think it will last long enough to find out here! I will make 2 kits next time and allow oneof them to age a couple of months in the dark. A couple of tips if you buy this; the instructions are hidden in the packet with yeasts etc and are folded up small so you can't see it easily, and when you make the kit take your starting hydrometer reading BEFORE adding the oak chips - for some reason these steps are reversed on the sheet and you will end up with oak chips interfering with your hydrometer.”
