“Pushed this wine with an extra 1.5Kg of white sugar and the high-alcohol/dessert wine yeast. At 18C this took 6 weeks to ferment out, which it did completely, ending at 15-16% The best thing about this kit was that there was so much flavour it carried the extra alcohol effortlessly. Scented with the the included elder flowers the end result is very floral with a complex flavour like fino sherry, more lemon than grape.”

“We tried this because we wanted a dry white with a bit more depth and this would rate as one of the best whites we have made so far. The perfume is more delicate than the shop variety and we prefer it that way. A good crowd pleaser.”
