“Pushed this wine with an extra 1.5Kg of white sugar and the high-alcohol yeast. This was deliberately fermented at just 18C to keep tannin down but it didn't ferment out after 7 weeks, leaving a slightly sweet dessert wine of unknown alcohol content - perhaps 18% judging by effect. There is so much flavour in the underlying grapes the additional alcohol is not detectable in the flavour, which is light on tannin but strong on fruit - more cherry. Extremely pleasant result, fruitier and less sweet than port. Thanks for advice on kit choice from Lovebrewing for this project!”
