“Not sure about this one. It is a rich and fulsome brew, no doubt, and with complexities of flavours rendering it a connoisseurs choice, perhaps. However I found it somewhat unbalanced -- it could have been something I had not done entirely right, who would know? It was certainly more bitter than I would have liked, so much so that I resorted to a later and remedial addition of non-fermentable sugars (lactose). Sure, there was a hoppy bitterness but I also sensed something akin to an astringent tanniness like what a spec of skin form a sweet chestnut would give rise to -- and that was an off-putting distraction for my taste-buds.”
