Pouilly Fumé, Domaine Des Fines Caillottes, Jean Pabiot, Loire, France, 2022
Grape: 100% Sauvignon Blanc grown on various soils including flint, marl and limestone pebbles "Caillottes". Fermented with wild yeasts and aged for several months on the lees.
The vineyards are certified "Terra Vitis", a form of sustainable viticulture; not quite organic, but getting there!
Pale gold with brilliant highlights, a nicely focused expressive nose with notes of citrus, pink grapefruit, white peach and tropical pineapple & mango. Taut palate with lovely full, ripe and succulent stuffing, a chalky impression, restrained freshness. Distinguished expression, crisp, fresh and dry from the flinty terroir of the Loire, displaying the typical smokiness of quality Pouilly Fume.

An exceptional Pouilly Fumé, delicious by itself as an aperitif, it is also excellent served with seafood, sushi, poultry and certain cheeses such as goats' cheese.
