“First time I ever cooked mussels. Was delicious with some white wine , garlic and shallots and crusty bread for the sauce. Big success and took no time at all”

Hello Dora Live mussels open when cooked in an attempt to cool down. However - being partially cooked - these mussels are dead, so do not feel the heat and will not all open. NON OPENERS ARE PERFECTLY SAFE.
