“I fell in love with skate when I was living in France -- a long time ago. I recalled the recipe involving butter and capers. Once I moved back to the UK (after living abroad for 20 years) I found it practically impossible to find it in the stores, including in reputable fishmongers. But then I had fortune of discovering The Fish Society and (yes, finally!) I was able to prepare the skate wings in the way that I remembered. It was better than a great fish dish (because the quality was excellent) but it felt nostalgic too, in a wonderful way.”
