“Excellent skate arrives freshly frozen and followed instructions how to separate the twin packs without thawing. Positively fresh, no aroma when opened as with fish bought from supermarkets. Cooks beautifully and again with no fishy smells. Patted dry, lightly dusted with plain flour and grated black pepper, pan fried in a little oil and butter with thick slices of lemon also fried until brown. Plus a handful of capers to give the pan a final sizzle. Nothing else required unless you have a few small home grown new potatoes.”
