“Great quality…but MAKE SURE you rinse first! I didn’t as I thought they’d already been rinsed! I won’t make that mistake next time. Question: Why don’t you provide clams from the British coast?”

“used to make a stock with wok-fried skate, saving juices, then added a few veg and then loads of clams - and other things - smelled good - but meretrix disappointing. Even shavings of bottarga - they just didn't work for me (I've tried them with similar fish - can't remember which fish - but not strong but white - will have to try harder) But do you get Palourde clams? hoping for similar, but better, results - think this why I perseverate - second time I tried this, but alas, not a palate hit. but thanks anyway (bought some razor clams from you some time ago, so will try then instead) kind regards, De Elisabeth Whipp”
