Beech makes great long lasting coals - more so than oak. It is also quite a neutal wood, so the smoke flavours don't compomise the oak & cherry I used for main cook.”
My word, the bark & smoke ring on those ribs is bonkers!!! I've never been too fussed about an offset, but this could change my mind 😍
