If the logs are quick to light and heat, that means they're very dry and shouldn't smoke. It sounds like you might be overloading the fuel tray which restricts airflow.
As per my other response, the Ooni Karu 16 works most effectively with a charcoal base and a very small amount of wood - it gets very smokey very quickly if too much wood is added, and it also runs most effectively when the wood is only loaded to the central part of the fuel tray.
