Brilliant for making socca - a tasty pancake that they sell in the south of france. Just whisk chickpea flour and water - cook in a frypan - best result on a wood fire or wood oven! Top with whatever you have in the fridge - bits of meat/fish/beans, olives, any cooked veg - lots of fried onions and garlic - and a slug of olive oil on top - a few herbs.... Or - serve as in France - just salt and olive oil!

Great for chickpea bread and as an extra bit of flavour, to replace a quarter of the flour I use in my savoury pancakes.
