Handmade Beef Wellington Fillet (1.2kg) Reviews

4.8 Rating 8 Reviews
Read Field & Flower Reviews

Our beef wellington is handmade and just the thing for that special occasion. We use our finest West Country fillet of beef with Ardennes paté, sautéed mushrooms and onions, wrapped in Parma ham and encased in puff pastry. We recommend cooking at 180°C for 30-35 minutes for medium-rare. Serve with dauphinoise potatoes for a bit of extra luxury! Sourced from a handful of farms in Somerset, our West Country beef is grass-fed, free-range and high-welfare, meeting our own exacting welfare standards. We dry-age all of our hindquarter cuts on the bone for a minimum of 28 days, developing flavour and tenderness. The meat contains high amounts of omega-3 fatty acids and is loaded with vitamins and minerals due to the grass-fed diet. Hand-butchered in Somerset using traditional techniques, our grass-fed British beef is the best that you can get.

I had the Beef Wellington 1.1kg. It was “absolutely delicious” as one of my guests describe it. There were 5 ample portions and although there were only 3 of us, all 5 medium rare were eaten with real pleasure. I served it with mashed potatoes, peas and home-made beef gravy. My only criticism is that, like a previous reviewer said, the mushrooms make it somewhat damp at the base. I broke open the aluminium tray before cooking, to release the liquid, but it still had a somewhat soggy base. Nevertheless, it was the best Beef Wellington I have ever tasted and I have eaten it in a number of officers’ messes and restaurants around the world. Very well done!

This joint looked very impressive when cooked and made a great centrepiece for New Year's Day. I would give the beef 5 stars - it sliced so easily, was succulent and extremely tender but found that as stated in the information there was an excessive amount of liquid when cut. I would buy this again but would insert some skewers in the bottom to drain some of the juice which I believe comes from the mushrooms. Well don Field and Flower.

We decided to have Beef Wellington for Christmas lunch as a change from turkey & frankly more of a special treat. Even though it was delivered on 19th December, it kept really well in the fridge. All I had to do was unwrap it & put it in the oven - the easiest Christmas lunch I have ever cooked! It was utterly delicious. The cooking time given worked perfectly, the beef was beautifully cooked and extremely tender due to the pastry casing. The pastry was also delicious. I have to confess that the small slice left over, eaten cold with a cup of hot coffee, made the most amazing breakfast on Boxing Day. I just hope this will be available again for Christmas 21.
