Our free range gammon is ideal for making a gorgeous ham to slice and eat as a centrepiece or day to day. This joint is expertly dry cured - a gentler curing process creating a delicate salty sweet flavour. Follow our cooking instructions for either roasting or boiling to make the perfect ham every time.Our bacon and gammon is traditionally dry cured in order to gently preserve the meat, without the need to speed up the process. Our curers say that the secret ingredient is time. The pork that we cure is sourced from passionate pig farmers in England, where the pigs are slowly reared on a natural diet. They are truly free-range meaning they are born and reared in fields all year around with straw bedded huts for shelter. This contributes to pork with great texture and incredible depth of flavour and supports our free-range pork industry.

I bought 2 pieces, a 1kg and a 2kg piece, and took the larger one cooked and ready to slice for our hosts (family of one of our sons) to use on Christmas Eve. It was delicious, and cut well. The same for the smaller piece which a smaller group of us ate at New Year. I repeat my review last year, that I think the joint is tastier if one doesn't follow your instruction to bring the joint to the boil in water, and throw that water away. The pickling brine is clearly exactly right, and throwing the first water away means a loss of some flavour. Just unwrap, rinse and air the joint, and then simmer it with some vegetables, before the final baking. One of the joints I bought had some rind, as I would have expected, so I removed it before baking. The other smaller joint had none. Your instructions don't mention rind, and possibly people not used to cooking gammon or boiling bacon might leave it on unless you warn them.
