Our free-range goose is filled with rich and gamey flavours, bringing to mind some much-loved Christmas memories (dodgy cracker jokes, questionable jumpers and plenty of good times over a traditional Christmas feast). The natural fat content of our goose means the meat is deliciously juicy and tender, so you really can’t go wrong. Goose meat is darker and more intensely-flavoured than turkey. This rich taste doesn’t need much seasoning, simply cook and let the meat do the talking! Just remember to save the fat after cooking to make the ultimate roast potatoes. Our geese are reared by Stuart Perkins on his Castlemead Farm in Somerset. Stu uses traditional, free-range farming methods which ensure the highest levels of animal welfare. His geese are free to roam and forage around the farm, feeding on grass and insects, as well as home grown cereals that Stu will scatter for them. Sadly disappointing. The bird turned out to be 3.4kg instead of the 4-5kg that was paid for, making it expensive for the size. I’ve cooked whole geese for 9 years in a row now and they always turn out well. Sadly this one didn’t, even though I’m familiar with the oven, cooking time etc. The meat wasn’t flavourful and there wasn’t much meat on the bird. Bit of a disappointing Xmas centrepiece.

This was delicious with Christmas dinner but also served several meals/snacks/stock and goose fat.

A luxurious treat, which has left behind 5 jars of goosefat in my fridge. We ate everything but the bones - the skin makes delicious 'scratchings', and the bones made soup before I put them in the food recycling.

Being hungarian, my memory of goose is quite different from yours. Of course ours were fattened, and your is not, and certainly that makes a different taste..But it was good, family liked it.

This was a truly outstanding centrepiece to Christmas dinner. Will definitely order again next year, so much tastier than turkey.

Being hungarian, my memory of goose is quite different from yours. Of course ours were fattened, and your is not, and certainly that makes a different taste..But it was good, family liked it.
