Fed by chalk springs, these nutrient-rich waters create a clean, verdant habitat that gives the trout their signature delicate flavour. Farming takes place on historic mill sites using the natural current to power custom raceways, with water returned to the river in excellent condition. ChalkStream is recognised for its sustainability credentials and is highly praised by Michelin-starred chefs as a standout British alternative to salmon.
