The Solstice is the jewel in the crown, a washed rind cheese made with Jersey cow's milk and washed with Somerset Cider Brandy. Glastonbrie is a brie-style cheese with a brilliant white rind enrobing a golden, creamy centre. The Little She is a sheep's milk camembert, with a delicate creamy flavour and hint of developed citrus. For a more rounded savoury flavour, the Shilling is a small but mighty cheese made in the style of the French Crottin, with a lift of macademia, almond and mushroom. The renegade of the cheese board is the Smo'King of the Castle, a hard crumbly goat's cheese with a pleasing sweetness over delicate smoke.
