The Westcombe Red is Somerset’s take on the Red Leicester and is produced from rich unpasteurised milk. It’s a mellow, semi-hard cheese that has benefited from around five months of maturation in traditional cloth-bound 10-kilo wheels. This artisan red cheese boasts a depth of flavour with hints of roasted nuts. Westcombe Dairy is a small artisan dairy in East Somerset which makes traditional cheddar and other West Country cheeses, using unpasteurised milk.
