Our rack of wild venison is French-trimmed and trimmed of all fat to make for a showstopping centrepiece. We select slightly bigger deer with a fuller medallion that have been hung and aged to tenderise fully before butchery, making the venison loin buttery soft and velvety in texture.Our wild Venison is lean, versatile and contributes to vital conservation management across our UK woodlands. We shoot mainly Red and Fallow deer across the South West in their relevant open season, and other breeds come through when available. We believe that the culling of deer in the wild is an important part of land management and is among the most sustainable sources of protein you can buy. Wild venison meat is a natural byproduct of the efforts of conservation management to increase biodiversity and maintain the quality and structure of our British deer populations.
