Our fillet tail ends are cut from the tapered end of the beef fillet. This means you get the same cuts-like-butter texture and flavour as a prime fillet steak, but the narrower shape of the tail means it requires a bit more creativity in cooking - it's cheaper for this reason. This is the ultimate cut for cutting into strips and flash frying for stir fry, stroganoff or steak wraps. While we try to keep our tails as big as possible, the nature of this being a byproduct of cutting fillet steaks means that our pack of fillet tail ends may be comprised of 1-4 pieces.At Field & Flower, we strive to bring you the best of British beef. All of this takes time, and our beef is allowed to grow slower for longer, spending at least two seasons at grass and fed on a natural diet.
