“I use this cut of beef as the basis for a beef broth (boiled with an onion, carrot, parsley). The broth and the boiled meat are both delicious- the meat wth steamed veg, a little good olive oil, salt and pepper. Feel-good food.”

“Fell off the bone good! Applied my home made dry rub (five spice, sugar, salt, pepper). Cooked at 105 degrees for 8 hours on my smoker. Served with some home made hoisin sauce on Farmison bao buns. Guests were calling me Bao bun GOAT.”
