“As my first attempt with mutton, I wanted to enjoy the more intense flavour in one of our favourite dishes. I deboned and diced the meat, roasted the bones and made a stock then used these to make a big tagine with onions, root vegetables, chickpeas and my own preserved lemons and Ras el Hanout. The mutton worked perfectly with the sweet, sour, salty and spicy flavours of the tagine.”

“After some weeks of trying to find a butcher who could provide mutton I came across Swaledale on line. The mutton was superb, cooked very slowly as recommended and we had it for Christmas this year. Congratulations and thanks to Swaledale.”
