Hi Janet, I'm very sorry to hear you didn't have a good eating experience with this cut of meat. Mutton meat comes from adult sheep that have lived a full life, so the meat will naturally have more texture than lamb. For a guaranteed good eating experience mutton meat is best cooked low and slow, however, with this meat being cut from the loin (a more fine-grained muscle) it would also eat well served pink.
