The Holm Oak tree (Quercus Ilex) is a hard, dense and aromatic hardwood, highly valued for its long burn characteristic and authentic use in wood-fired oven cooking. This kiln-dried holm oak log is harvested in Spain from managed woodlands, where the focus is on acorn production. The tree is not felled solely for wood, but only if it is beyond its productive use. Many of the trees are up to 400 years old and grow mostly in dry-stone walled enclosed pastures. The Holm Oak tree is the one that feeds the Ibérico pigs, called ‘pata negra’, which go on to make beautiful Jamón Ibérico. Its long burn profile and sweet aromatics of woodland, black pepper, and cinnamon with an intense caramel undertone make it an ideal choice for cooking.
