Short-grain rice, also known as paella rice, is the most common type in Spain. Selected from varieties such as bahia and senia, this short and rounded rice is ideal for cooking perfect paella and rice dishes. First time I've used this variety of rice as I'm used to using bomba rice, but great results and was looking for a cheaper alternative, just adjust the amount of liquid/stock you use as it only absorbs twice its volume rather than 3 - 4 times like bomba but flavour and overall taste of the paella no difference at all. Outstanding delivery and service by Basco too.

Tried this Valencian 'Catala' rice in a paella the other day. I'm an old hand at making paella now and have enjoyed countless versions of them over the last 12-15 years. That said, I'm still learning though when it comes to the suttle nuances of varieties of rice used in the famous dish. And I'm not just referring to whether its senia, bomba or bahfa varieties. Years of cultivation and regionality often make a difference as well. As every good baker will tell you, your bread is only as good as the flour its made from. For myself, that beautifully sums up the relationship between the paella and the rice. Well, as for absorbtion, the rice was almost on par with a decent Bomba. Aside from the 3/4 cup of EV oil and residual juices from the beans and chicken, It easily also took up the double amount of liquid stock added (650g rice 1300gr stock) and the extra 400gr I gave it to bring it to consistency. Also, it held firm during cooking and did not break down as inferior rice may occasionally. The resulting soccarat was also crisp and full of flavour. As a final testament to its quality, It was readily devoured by six hungry heads and there were no leftovers just clean plates! Now, I'm not saying it was entirely due to rice that the Pan was so well received on this occasion but remember what I said about the flour.... Well done Basco.. Great rice at a very keen price!
