Short-grain rice is the most common type of rice in Spain. Also known as paella rice, this type of short and rounded rice is especially selected from varieties such as bahia and senia which originate in Valencia. We’ve used this for paella and arroz negro and it’s brilliant. You can get the perfect “crusty bottom” without drying out the rice above.

I have used supermarket paella rice before and never quite ended up with the texture I hoped for. I assumed I was doing something wrong, perhaps my hob wasn't suitable, maybe it was the pan? Turns out I'd been using the wrong rice. The Catala Paella rice I got from Basco is no more expensive than the supermarket and gives better results. The fact that it comes in a nice little cloth sack doesn't hurt either.
