The dough is shaped and allowed to ferment for over eight hours before baking. La Coca de Folgueroles, based outside Barcelona, specializes in the artisan production of this famous bread. Pan de coca is an ideal accompaniment to all meals. It is the bread used to make pan tumaca (tomato bread), and pairs perfectly with Spanish ham charcuterie, cheeses, tapas, or is great for breakfast or brunch. Defrost the ready-baked bread for 20 minutes and warm it in a preheated oven at 200°C for 4-6 minutes. Alternatively, toast it in a toaster, grill, or barbecue.

Just like the bread delivered in galicia. So much better than a French baguette. Light and fluffy and not chewy. A bit like ciabatta.

I have been searching for this bread for so long. Pan tumaca just isn't the same with any other bread...I lived in Barna for a fews years too. God I miss Spain.

It wasn't that good, unfortunately. And it went mouldy quite quickly, although I suppose it's meant to be eaten straight away. I wouldn't buy it again.

Fabulous bread and a great accompaniment with fois gras, pate or freshly cooked prawns. Yum, yum.
