I actually have not eaten it yet but just cooked it yesterday and nipped off pieces while cooking. It may take 8 to 9 hours to cook it until it is melt in your mouth but it is worth it. I used my new Spanish flour from Basco to dredge it in, seared it on all sides and then simmered in Freja bone broth with a little red wine, a touch of tomatoe paste, onions, carrot, and celery and some herbs. Will serve it up this evening with some polenta.
