WHAT IS IBERICO PORK LOIN? Iberico Pork Loin Lomo stands in a league of its own, distinct from regular Spanish pork offerings. The care given to the pigs' diet and their natural, stress-free environment results in meat that transcends expectations. Its delicate yet bold profile creates an experience that redefines what pork can truly embody. Iberico pork comes from free-range Iberico pigs indigenous to Spain. They live an ideal life rooting for acorns under cork and holm oak trees. Their diet provides a complex flavour and a fat that literally melts in your mouth. The exercise provides the beautiful marbling that distinguishes Iberico pork from any other. HOW TO COOK IBERICO PORK LOIN? The ideal joint for roasting whole or cutting into pork chops and cooking on a BBQ or frying pan. If there is any leftovers, cut into strips and toss in a hot wok for a quick midweek stir-fry. HOW WILL I RECEIVE MY IBERICO PORK LOIN? You will receive one frozen vac pac of iberico pork loin delivered on ice pads. If you are not using the cabecero straight away, store in the freezer. If you are, then you will need to thaw it in the fridge for at least 24 hours before cooking. PLEASE NOTE THAT WE SOURCE THIS PRODUCT IN VARIABLE WEIGHT PACKS, SO EXPECT A WEIGHT VARIATION OF APPROXIMATELY 200G +/- ON YOUR IBERICO PORK LOIN.

The best pork in the world! I like to marinade it in olive oil, white wine and fennel seeds the day before. I then cook it as i would a steak on the bbq, medium rare and cut into steaks. Basco also sell the MEATER food thermometer which I would highly reccomend. It's so easy rto use, just download the app and it alerts you when the meat is ready. You choose how you want it cooked and it does all the hard work for you. I also have cooked this succulent meat roasted in the oven and also rottiserie style on my greek foukou bbq. Although I would reccomend other cuts in Bascos range for the rottiserie style. This product is best cut into steaks and cooked like a fillet steak on a bbq or pan. Simply delicious!

I was looking forward to a long, low and slow cook with this particular cut of Galician beef, and it certainly did not disappoint. Braised for just over three hours with onion, garlic, carrots and celery, some beef stock and red wine... It made for a perfect winter warming stew. This chuck steak is so tender and flavourful. I will definitely be ordering again (and again)! Muchas gracias, Basco!
