Whole milk-fed lamb is a traditional product from Spain, where young lambs are still at their milk-feeding stage. They are usually slaughtered at 35 days of age and weigh between 9 to 12 kg. Our milk-fed lamb is reared on a farm with utmost care, and we believe that their lives are of the utmost importance. Traditionally, milk-fed lamb is roasted in a wood-fired oven with salt, oil, and a touch of water. The result is a soft-textured meat with a crispy golden skin that is creamy in texture and has some light gamey notes.
