“We have been enjoying pigs cheeks, Jamon Iberico and more recently Secreto, however, this is our first time cooking Presa Iberico. Fantastic weather two weekends ago allowed us to have a "Spanish" lunch with friends outside with as many Spanish influences included as we could muster - tapas, music and so on. We tried to imagine being in a remote cortijo in the hills. The Presa Iberico was the star of the day. We normally cook our meats sous vide and this particular cut of meat is ideal as it traps the juices and flavours and ultimately the meat melts in your mouth. I will definitely order more, hopefully for many more alfresco lunches (until we can once again travel to Spain}”
