Secreto Iberico is a prized cut from the top of the Iberian pig's loin. Located near the fat, it is often referred to as the 'hidden gem' of Iberico pork. I fell in love with Secreto on a holiday in Portugal, but it was hard to find in the UK. Whilst a well known quality supermarket had it on sale, the pieces were tiny and overpriced, hence my on-line search for an authentic supplier. I ordered my first kilo a few weeks back and was impressed with the delivery and the packaging (a polystyrene freezer box). On trying it on a barbecue, I was delighted to find that it was exactly as I remembered, but at a really competitave price. I probably overcooked the meat the first time due to the commonly held belief that pork has to be well cooked, but after a bit of research, I realised that I didn't need to be so cautious. The second barbecue with the other half of the first batch was even better as the flavour was even better. I even convinced a friend who is a 'nominal' vegetarian to try a piece; he was so impressed that he asked for the web link to buy some himself. Don't cut the fat off (it tastes devine and isn't chewy) and don't overcook it, and you'll never look back. Indeed, I have mixed feelings about this review as I don't want them to sell out!

Having been blown away by Basco's cheeks, I decided to buy the Secreto because I saw it described as 'tocino', which is one of my wife's favourite cuts of pork. Wow... She was blown away, as were my son and daughter, who were also brought up as tocino fans. Yet again the meat was so delicious and as tender as it is possible for meat to be.
