Abanico Iberico is the outer layer that wraps around Iberico ribs. It's a thin, marbled piece of meat that's perfect for grilling, producing juicy and crispy slices of pork. The name 'Abanico' comes from its fan-like shape, reminiscent of a traditional Spanish hand fan. These indigenous black Iberico pigs roam the dehesa forests of southwest Spain, feeding on herbs, grasses, and acorns. Their diet contributes to the wonderful flavor of the pork, while their exercise helps create the marbling that makes Iberico so special. Abanico has a rich, complex flavor profile, with notes of grasses, herbs, and acorns. It's high in mono-unsaturated fats that melt at low temperatures, making it a healthier option than regular pork. Abanico is best grilled or cooked over low heat to bring out its full flavor.

This is so delicious that I order 2 of them in the next order. We used it to make char Siu. Meat is so tender and perfect portion of fat in it.

I bought this product on the recommendation of my sister. I seasoned it over night and cooked in on the BBQ. it was delicious, the whole family loved it… better than steak. So much flavour, soft meat with beautifully rendered fat that just melted in the mouth. Will definitely buy again and again and again!

Very delicious. I cooked it longer in a pan and on barbecue than the suggested recipe and then wrapped in foil and put it into the oven for 20 minutes.

I bought this on account of the Basco description. Although the image looks rather fatty, I thought it would be worth the risk. This cut turned out DELICIOUS! I fed it to myself and 3 friends and everyone thought it the best pork they had ever tasted. The fat just disappeared in the cooking process. I cooked it sous vide for 1 hour at 57C to achieve a medium-rare finish, then flashed it in a very hot skillet to get a crust. I'll buy again.
