Arturo Sánchez Boneless Paleta Ibérica de Bellota Shoulder Ham from Basco is produced from Ibérico pigs situated in Guijuelo, Spain. This boneless shoulder ham, known in Spain as Paleta Ibérica de Bellota, has a rich nutty taste and can only derive from black pigs of the Iberian breed whose unique origin can be traced back through the ages. This ancient breed possesses many qualities, including the capacity to accumulate fat between the muscular fibres, which gives the ham its unique white streaks. The pigs are allowed to freely move around extensive wooded pastures known as Dehesas, where they are fed on a diet of fresh grass and quality acorns from Holm and Cork Oak meadows, giving the meat its exquisite taste and aroma.

It is wonderful ham ,from pigs which have been fed on acorns.Brilliant taste,absolutely exquisite and I will be buying again.You cannot get a better ham

This ibérico ham is the best we’ve had, so delicious. Not too salty chewy or greasy, just perfect. Hubby and I bought if as a Christmas treat late November for ourselves but I don’t think is going to last until Christmas. Also weight over 2460 - more than advertised. Highly recommend.

This must be the best cured ham I have ever tasted. Having lived in Catalunya and spent quite a lot of time in Spain, I am familiar with the range of qualities in serrano ham and had high expectations for this paleta. It does not disappoint. It is well dried, making for a very fine texture and the flavour it produces is huge. Although it is expensive, in terms of flavour per gram, it is money well spent.

Good flavour. Right striations of fat. Hard on the outside but soon softens up under surface. Haven't decided best procedure for carving. No waste. Full weight in meat.
